Maple Pumpkin & Feta Pearl Cous Cous Salad

 

If you're into meal prep and salad, here's a brilliant idea to try. It's healthy, delicious and fits perfectly into our new Limited Edition Glass Lunch Bowls. Add your snacks and take it to work or on a picnic in our On The Go bundle!

INGREDIENTS

  • 1/4 Kent pumpkin, chopped and skin removed
  • 1 red onion, peeled and sliced
  • 1 tbsp olive oil
  • 1 large handful of baby spinach
  • 100g pearl cous cous, (cooked as per packet instructions)
  • 100g feta, crumbled
  • 50g walnuts, roughly chopped
  • 2 tbsp maple syrup


METHOD

  • Place the pumpkin, red onion and olive oil in an Air Fryer Bowl and cook for 20 minutes on 180 degrees or until soft.
  • In a large bowl, add baby spinach, pumpkin and onion, cous cous, feta, walnuts and drizzle with maple syrup.
  • Give it a good mix through then pour it all into the salad bowl.
  • Place the lid on and store in the fridge for when you are ready to eat!


MEAL PREP PRO TIP: This salad can be made in a double or triple batch to get you through a few days. To keep it fresh, just add the baby spinach daily.
