Kels Christmas Treats: Cookies, Brownies & Balls (oh my!)

These two super easy treats are my go-to every Christmas. Perfect for Christmas Day or taking along to any Christmas party, the kids love making them and they're simply scrumptious. Santa's going to thank you this year for leaving these out with his glass of milk!

 

Rudolph Chocolate Brownies

Rudolph Chocolate Brownies

INGREDIENTS

1 cup plain flour
3/4 cup caster sugar
1 tsp baking powder
100g unsalted butter
1 cup chocolate chips
2 eggs
Pretzels, to decorate
Edible eyes, to decorate
Red smarties, to decorate

METHOD

 

  1. Preheat oven to 180 degreesIn a large bowl add the flour, sugar and baking powder.

  2. In a small saucepan over low heat, add the butter and chocolate chips and let them melt

  3. Once melted pour into the bowl and then continue to add the eggs. Stir until a batter like consistency

  4. Line a rectangular dish with the unbaking paper and pour the brownie mix onto it

  5. Smooth down evenly with a spatula then pop in the oven for 25-30 minutes, or until tops are golden.

  6. Remove the brownie from the oven and let it cool

  7. Mix up some icing with icing sugar and a drop of milk until a thick consistency

  8. Cut the brownie up into small rectangle pieces and start decorating with the eyes, pretzels as antlers and the smarties as a nose!

INGREDIENTS


10 medjool dates, seeds removed
1 cup almond meal
3 tbsp coconut oil
1 cup coconut (plus extra to roll balls in)
1 tbsp cacao powder

METHOD

  1. In a food processor/blender add all the ingredients
  2. Blend until a crumble like consistency
  3. Empty the mix onto a working space and start rolling them into balls
  4. Set aside some extra coconut and once the balls are rolled, continue to lightly toss them through the coconut
  5. Pop them in the pantry jars and once full, pop the lid on and place in fridge to set
  6. When they have firmed, wrap some Christmas ribbon around the jar and you have yourself the perfect gift for someone!

 

Gingerbread People Recipe

GINGERBREAD PEOPLE

With Christmas around the corner, this Gingerbread People recipe is a fun way to get the kids involved in some baking! A perfect gift idea for loved ones too!

INGREDIENTS

1 1/2 cup plain flour
1/2 cup brown sugar
1 tbsp ginger ground
1 tsp cinnamon ground
1/2 tsp bicarb soda
100g butter, melted
3 tbsp honey
Gingerbread men cookie cutters
1/4 cup icing sugar
Dash of milk
Red and green smarties, for decoration

METHOD

  1. In a large bowl add flour, brown sugar, ginger, cinnamon and bicarb soda.
  2. In a seperate bowl add the melted butter and honey and stir. Pour the wet ingredients into the dry and stir through well.
  3. Grab your Seed and Sprout unbaking paper and lay on a chopping board. Place the mixture onto the paper and start to roll out to create a nice even 1/2 cm thick layer of gingerbread.
  4. Once it’s all rolled and even, place another piece of the unbaking paper on top and pop in fridge for an hour.
  5. Preheat oven to 180 degrees and remove the gingerbread from the fridge.
  6. Grab your cookie cutters and gently start pressing them into the dough.
  7. Transfer the gingerbread men onto the unbaking paper and ready for the oven
  8. Once all cookies have been cut out, place in oven for no longer than 15 mins or until firm.
  9. When the cookies have cooled down, place the icing sugar in a small brown and add a dash of milk and mix until a paste has formed
  10. Start adding the icing onto the smarties and decorate your little men!
  11. Once all the cookies have been decorated, pop them into your Seed and Sprout eco stow for full freshness and long lasting goodness!
