Healthy Baked Treat Recipes for the School Holidays!

🍌 BANANA OAT MUFFINS

Perfect for breakfast or a snack on the go, these muffins are naturally sweetened with ripe bananas and packed with fiber rich oats.

Ingredients:

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup almond milk
  • 1/4 cup maple syrup
  • 1 tsp baking powder
  • 1/2 tsp cinnamon

Instructions:

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with eco-friendly muffin cups.
  2. Mix the mashed bananas, oats, almond milk, maple syrup, baking powder, and cinnamon until well combined.
  3. Pour the batter into the muffin cups and bake for 20-25 minutes.
  4. Let them cool before serving. These muffins can be stored in a food safe pouch in the freezer, making them perfect for prepping ahead!

 


🍪 VEGAN CHOC CHIP COOKIES 

Who doesn’t love chocolate chip cookies? These cookies are made with almond butter and dark chocolate chips, so they’re both indulgent and nutritious.

Ingredients:

  • 1 1/4 cups almond flour
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat the oven to 180°C (350°F) and line a baking tray with Un-Baking Paper(hint: this is our reusable alternative to baking paper).
  2. In a bowl, mix the almond flour, almond butter, maple syrup, vanilla, and baking soda. Stir until smooth.
  3. Fold in the dark chocolate chips.
  4. Scoop the dough into small balls and place them on the baking tray. Gently flatten each one.
  5. Bake for 10-12 minutes or until golden brown. Cool before enjoying!

 


💚 ZUCCHINI BROWNIES

Yes, you read that right – brownies with a hidden veggie twist! These brownies are rich, fudgy, and packed with nutrients from zucchini. Perfect for sneaking in some veggies while treating the kids!

Ingredients:

  • 1 medium zucchini, grated
  • 1/2 cup almond butter
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • A handful of dark chocolate chips

Instructions:

  1. Preheat your oven to 180°C (350°F) and line a square baking tin with Un-Baking Paper.
  2. In a bowl, mix the grated zucchini, almond butter, cocoa powder, maple syrup, vanilla, and baking powder until smooth.
  3. Pour the batter into the prepared tin and sprinkle with dark chocolate chips.
  4. Bake for 20-25 minutes or until a toothpick comes out clean.
  5. Allow the brownies to cool before cutting into squares.

 


🍎 AIR FRYER APPLE CINNAMON CAKE

This apple cinnamon cake is soft, and naturally sweetened with applesauce. It make a great afternoon snack for the kids or a wholesome dessert after dinner. Plus, baking in the air fryer means less mess!

Ingredients:

  • 1 cup whole wheat flour
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • Coconut oil spray for air fryer bowls

Instructions:

  1. Preheat your air fryer to 160°C
  2. In a bowl, whisk together the flour, coconut sugar, baking powder, cinnamon, and nutmeg.
  3. In a separate bowl, mix the applesauce, almond milk, and vanilla extract.
  4. Combine the wet and dry ingredients, stirring until just combined.
  5. Lightly spray your Air Fryer Bowl with coconut oil, then evenly distribute the batter into your bowl.
  6. Place the bowl in your air fryer and bake for 10-20 minutes or until the cake is golden brown and a toothpick comes out clean.
  7. Let the cake cool slightly before removing them from the bowls. You can enjoy it as it is or top with a sprinkle of cinnamon and a dollop of dairy-free yogurt for an extra treat!
