Nothing says ‘I love you’ like breakfast in bed!
We love making pancakes because they are super quick to make and we usually find most of the ingredients we need are already in the pantry!
Pancakes are also super versatile! Cut them up to spell names, decorate them with sweet or savoury toppings, and let's face it, they are loved by all!
Our favourite vegan recipe includes apple cider vinegar for extra fluffiness and over ripe bananas to use up any old bananas that have seen better days!
To make 4 servings you’ll need;
Dry ingredients
- ½ cup of flour
- ½ cup almond meal (sub for regular flour if you don’t have any)
- 2 tablespoons of sugar
- 1 tablespoon of baking powder
- ½ tsp of salt
Wet ingredients
- 1 ¼ cup almond milk
- 1 overripe banana
- 1 tablespoon apple cider vinegar
- 1 teaspoon of vanilla essence
Whisk all of your wet ingredients in one bowl and then add all of your dry ingredients. Whisk all together until you have a slightly thick batter. Add more flour if it’s too runny and more milk if it’s too thick. You want it to slowly fall off a spoon! Let it sit for 5 minutes.
Place your frying pan on a medium heat and add ½ a teaspoon of oil. Add a quarter of your batter mix to a frying pan and when the top bubbles flip it over to brown both sides.
Plate up and decorate any way you like! We love adding fruit, nuts and a good drizzle of date or maple syrup for that professional 'restaurant' look and feel!
